Our Lemon Blueberry bar—aka Citrus Riot—took the longest to get just right.
After years in the wine world, I’d learned the magic of high-acid pairings—the way a crisp wine could cut through a rich meal and leave your palate refreshed. That same feeling is exactly what I craved on long runs and rides through the dry Rocky Mountains: something bright, tart, and energizing.
So I started experimenting.
At first, I zested lemons into our honey mix and let it rest overnight. The flavor? Sometimes amazing. Sometimes... not there at all. (Turns out lemons don’t come in standard issue.) Even worse, that method made the bars fall apart more easily.
Then came the breakthrough: cold-pressed lemon oil. Same citrusy kick, but way more consistent. I also added a touch of citric acid—that stuff you find in your baking aisle—which helps your body absorb nutrients and convert food into usable energy. Finally, I tossed in antioxidant-rich blueberries, and just like that, Citrus Riot was born. Bright, bold, and built for the trail.
